الكبسة النجدیة باللحم

Al Kabsa Al Nagdia with Meat

المقادیر

Ingredients

3 كیلو لحم غنم بدون دهن

3 Kg of fat-free mutton

8 حبات كبیرة من البصل

8 large onions

2كیلو أرز-طویل الحبات

2 Kg of rice

3 أكواب سمن

3 glasses of butter or ghee

2 كیلو بندورة(طماطم)

2 Kg of tomatoes

6 عیدان قرفة

6 sticks of cinnamon

ملعقتان صغیرتان من عصیر البندورة(طماطم)(صلصة)

2 teaspoons of tomato sauce

ملعقتان صغیرتان من حب الفلفل الأسود الحار

2 teaspoons of pepper

ملح حسب الذوق

salt.

الطریقة

Method

قطعی اللحم قطعًا متوسطة الحجم، ثم افرمی البصل، وضعیهما فی القدر مع السمن على نار حامیة، واقلیهما حتى یصبح لون البصل أحمر.

Cut the meat into medium pieces, mince the onion,and fry them together till they brown.

اسلقی حبات البندورة(الطماطم) لمدة دقیقة واحدة، ثم قشریها، وافرمیها حتى تصبح ناعمة، وأضیفیها إلى اللحم مع التحریك حتى تذوب البندورة.

Boil the tomatoes for a minute, then peel and mince them.

 أضیفی معجون البندورة، والفلفل الأسود الحار، والملح حسب الذوق، ثم اغمری اللحم بالماء المغلی، واطهی على نار متوسطة، ثم خفیفة حتى ینضج اللحم على أن یبقى مغمورًا بالصلصة مع إضافة المزید من الماء المغلی عند الحاجة.

Add the tomato sauce, pepper and salt to the meat then cover with boiled water. Simmer on a moderate to low heat till the meat is well cooked and covered with tomato sauce. Add water whenever needed.

اغسلی الأرز جیدًا، وصفیه، ثم ضعی ماء فی قدر إلى أكثر من نصفه، وأضیفی إلیه الملح، وعندما یغلی الماء أسقطی الأرز، واسلقیه لحوالی ست دقائق.

Wash the rice well. Fill a pot with water and add salt. When the water boils add the rice and keep it boiling for six minutes.

صفی الأرز المسلوق من الماء، واكبسیه فوق اللحم فی القدر، ثم ضعی القدر فی فرن ساخن حرارته 300ف لمدة 45 دقیقة، ومن ثم حركی الأرز مع اللحم، واسكبیهما فی طبق واسع، وقدمی هذه الكبسة ساخنة.

Rinse the rice and put it over the meat in its pot. Microwave the pot for 45 minutes at 300 degrees. Mix the rice with the meat. Put them on a large plate and bon appetit.

After I originally left a comment I appear to have clicked on the -Notify me when new
