الكبة النیئة

Raw Kibbeh

الوصفة ل12 فردًا

Serve 12

المقادیر:

Ingredients

كیلو من لحم العجل أو الغنم الخالی من الدهن

1 kg of very fresh, learn, fat-free veal or mutton

بصلتان

2 onions

500غ من البُرْغُل الناعم

500 g of ground bulghur

قلیل من الكمون، والقرفة، والفلفل الأسود

cumin, cinnamon and pepper

ورق نعناع أخضر، وشرائح بصل للزینة

Fresh mint.onion slices (for decoration)

ملح حسب الذوق

Salt

الطریقة

Method

ضعی اللحم فی المطحنة، واطحنیه مرتین، ، ثم اغسلی البرغل بالماء البارد عدة مرات، وصفیه عن طریق العصر بیدیك.

Mince the meat twice. Wash the bulghur with cold water several times and drain.

قشری البصل، واطحنیه، وأضیفیه إلى اللحم مع البرغل، والتوابل، ودلكی جیدًا، ثم ضعی الخلیط فی المطحنة، واطحنیه مرة، واحدة، ودلكیه من جدید حتى یصبح لینًا كالعجینة.

Peel and mince the onion and add it to the meat with the bulghur and spices. Mix to a paste.

افرشی الكبة النیئة فی طبق كبیر، وزینیها بشرائح البصل، وورق النعناع الأخضر، وصبی فوقها قلیلاً من زیت الزیتون، وقدمیها.

Spread the raw mince on a big plate and decorate with the onion slices and leaves of mint. Pour olive oil over it and bon appetit.

الوصفة ل 6:8 أفراد

Serves 6-8

المقادیر:

Ingredients

ثلاثة أرباع الكوب من البُرْغُل الناعم.

¾ of a glass of soaked cracked wheat (bulghur)

ملعقتان كبیرتان من عصیر اللیمون.

2 tablespoons of lemon juice

حبتان من البندورة(الطماطم) الناضجة الجامدة.

2 tomatoes

كوبان من البقدونس المفروم.

2 full glasses of chopped parsley

ربع كوب زیت زیتون.

¼ of a glass of olive oil

ربع كوب عصیر لیمون مخلوط بنصف ملعقة صغیرة من الملح.

¼ of a glass of lemon juice mixed with 0.5 a teaspoon of salt

نصف كوب بصل أخضر مفروم ناعمًا.

0.5 a glass of minced spring onion

ملعقة صغیرة، ونصف من الملح .

teaspoon and a half of salt

ربع كوب نعناع مفروم ناعمًا.

¼ a glass of chopped mint

نصف ملعقة صغیرة من الفلفل الأسود المطحون.

0.5 a teaspoon of black pepper

كوبان من الماء البارد.

2 glasses of cold water

أوراق خس طازجة.

الطریقة:

Method

ضعی البرغل فی وعاء، واغمریه بالماء البارد. اتركیه ینتقع لمدة 30 دقیقة. صفیه عبر منخل ناعم، واضغطیه بظهر الملعقة لاستخراج الرطوبة. مددیه على قطعة قماش، واتركیه لیجف أكثر.

Soak the bulgur and leave for 30 minutes. Get rid of all the water, then press it with a spoon to get rid of all liquid. Put it on a piece of cloth to dry out

فی نفس الوقت حضری البقدونس. اغسلیه جیدًا، وهزیه لطرد الرطوبة، وانزعی السیقان الغلیظة . لفیه بمنشفة، وضعیه فی الثلاجة لیصبح هشًّا، وجافًّا.

Wash the parsley well, and shake to remove water. Remove the thick stems and wrap in a tissue. Put in the fridge to dry.

ضعی البرغل فی وعاء الخلط، وأضیفی البصل الأخضر . اعصری الخلیط بیدك بحیث یمتص البرغل نكهة البصل.

Mix the bulghur with the spring onion in a blender. press the mixture together so that the bulghur absorbs the flavor of the onion.

افرمی البقدونس خشنًا قلیلا. وقیسی الكمیة، وأضیفیها إلى البرغل مع النعناع.

Add the parsley to the bulghur and mint.

اخفقی الزیت مع عصیر اللیمون، وأضیفی الملح، والفلفل. أضیفی الخلیط إلى السلطة، وهزی جیدًا.

Mix the oil with the lemon juice and add salt and pepper, then add to the lettuce.

قشری البندورة، وانزعی البذور، وقطعیها مكعبات. حركیها بهدوء فی السلطة. غطی الوعاء، وبردیها لمدة ساعة على الأقل قبل التقدیم.

Peel and dice tomato, mix with the rest of the salad and cover.chill for at least an hour

قدمیها فی وعاء السلطة المبطن بأوراق الخس الهشة .خلیط عصیر اللیمون، والملح یقدم فی إبریق لإضافته حسب الذوق الشخصی.

Serve a plate decorated with lettuce. Flavour with lemon juice and salt.
